Cut from the loin with the sirloin & fillet tail running along the bone. The tenderness of the fillet combined with the juiciness of the sirloin allows for a satisfying & balanced eating experience. First lightly brown the fat, then cook on each side turning every 1-2 minutes, for 10-15 minutes depending on your heat and thickness of the cut. Pro-tip: once rested, cut the steaks off of the bone and braai the T of the bone until crispy.
