The denver is taken from the chuck of the carcass. It is a highly marbled cut and has a slightly coarser texture. The denver is more dense as it is packed with flavor. It has a similar texture to the rib steak and is the perfect Wagyu steak for anyone on a budget.

Cooking guidelines

Due to the density of the denver, we recommend you cook it 1.5 times the duration of a normal steak, +-12 minutes in total, obviously depending on your heat level. Like other cuts, turn every 1-2 minutes to ensure an even cook. If you like add a squeeze of lemon over the steak before taking it off the heat to rest. Enjoy it medium/medium-rare.
